Cabbage and White Bean Soup

Are you looking for something warm and filling, yet light and easy on your waistline? Something delicious and savory? This is it!

Although it is technically a soup, it is filled with so much goodness that it is stew-like. Every bite fills you with that comfort food feeling, but you can enjoy it knowing that you are being good to your body.

The other great thing about this recipe is that it is really easy! Once you have all the vegetables chopped, it's really just a matter of throwing them in the pot. In about 30 minutes, dinner is done. Perfect!

The Ingredients:

1 large, Onions, chopped

2 cloves, Garlic, minced

3 medium, Carrots, diced

1 tsp, Red Pepper Flake

6 cups, Vegetable Broth

3 stalk, large (11"-12" long), Celery, diced

28 ounce can, Fire Roasted Diced Tomatoes

1 head, large (about 7" dia), Cabbage, chopped

2 Cans Cannelini Beans

The Instructions:

1. Bring onion, garlic and celery to a boil in 1/2 cup of the broth.

2. Simmer 10 minutes

3. Add remaining ingredients, except for beans.

4. Simmer 20 minutes.

5. Stir in beans and simmer 5 minutes.
